Latkes recipe – gluten free

Ingredients for 12 latkes: half a kilo of potatoes, two eggs and an onion, frying oil, pepper and salt

Start by peeling, then grating the potatoes and the onion. Place the grated potatoes in a clean kitchen towel and dab until the potatoes are dry. Combine both vegetables in a bowl and season with salt and pepper, the next step is to make about 12 small pancakes of this mixture. Dab the raw pancakes with a paper towel to remove excess moist before frying. Fry the potato pancakes with oil in a skillet until they are nice and crispy.
